Even baking is airflow plus honest temperature plus a sealed cavity. Lose any leg and results wander. In Thermador convection ovens the usual suspects are a fan losing speed under heat, an element cooking along just a portion of its coil, a sensor whose numbers drifted, or a gasket seating unevenly around the door.
We do not guess from a photo of your cookies. We instrument the cavity, log temperatures at several points through a full cycle, watch fan behavior hot, and check the door seal all the way around. Whatever failed gets replaced with factory parts, and calibration gets confirmed against measurement before the job closes.
Bearings drag once the fan warms up, circulation collapses, and the cavity splits into hot and cool zones.
